Sauteed garlic rapini

Rapini, also know as broccoli raab, is a green leafy vegetable with smaller buds than your traditional broccoli but with a more assertive flavor. Rapini is great to complement any fish or chicken dishes. We recommend blanching your rapini if you wish to take the edge off the bitterness.

Sautéed Garlic Rapini

Ingredients:
3 tablespoons extra virgin olive oil
4 cloves of garlic, minced
1/4 tablespoon salt
1/4 tablespoon hot pepper flakes(optional)
1/2 lemon & lemon zest

Preparation:
1) trim bases of rapini stalks and set aside.
2) add olive oil, garlic, and hot peppers together in large skillet over medium-low heat.
3) cook until garlic is fragrant and lightly begins to sizzle ( approx 3 min).
4) add lemon zest, salt and pepper into pan.
5) raise heat to medium-high and add rapini stalks, turn stalks to thoroughly coat in oil and spices.
6) turn stalks frequently, until heated through, 1-2 minutes.
7) remove from heat and add fresh squeezed lemon, toss, and season with salt and pepper to taste!
